Dessert in a jar!

It has been a long time since I have posted on my blog, but I return with a delicious dessert that I made for Easter this year.

Trifle in a jar!


These are super easy to make and it combines two of my favorite things: lemon curd and mason jars! I made two kinds, one is strawberries with lemon curd and the other is blueberry with lemon curd. I made my lemon curd from scratch, but I cheated and used pound cake from the store.

Porko de Mayo

What is more tasty then pulled pork? Not only does it make a great barbeque sandwich, but it has the potential for so much more. So I cooked up a huge pork shoulder and decided to make a few meals out of it. First up is pulled pork tacos with spicy black beans and cilantro-lime rice.

Salty and Sweet



Salty and sweet butter pecan cookies are my favorite. I discovered the recipe from King Arthur Flour and have since made it my own. Butterscotch chips and pecans are awesome!

Easter Egg Cake Pops!


I made Easter egg cake pops. They are very cute! But I really struggled dipping the pops into the chocolate coating and having them come out smooth and pretty (you can see some misshapen ones in the background here). I got the idea from Bakerella. She makes the most adorable cake pops and has a book out on them as well.

Homemade farmer's cheese



Last week I tried my hand at making a simple farmers cheese. It is like a ricotta or feta in texture, but very tasty! I walked my sister though the process on the phone and she added rosemary and garlic to hers and it was also delicious! Recipe after the jump.

Maybe an Italian Elvis?


Tonight was a night of experimentation! I tried my hand at making pastry cream for the first time and tried a new recipe for pâte à choux (cream puff pastry), both from King Arthur Flour's Baker's Companion. It is an awesome cookbook and reference! Not to mention that King Arthur makes the best flours.
